This 15-minute air fryer Greek salmon is served with a fresh tomato, cucumber, olive, and feta salad for a fast, flavourful weeknight dinner. Serve it plated, bowl-style, or with quinoa or pita on the side.

For the village salad:
2pints/566 g cherry or grape tomatoessliced or left whole
4mini cucumbers or 1 english cucumbersliced into thin half moons
1/4cup/60 mL very thinly sliced red onionor to taste
1/3cup/80 mL sliced black olives
1/2 to 2/3cup/125 to 160 mL cubed or crumbled feta cheese
To dress the salad, or use your favourite Greek vinaigrette:
1/4cup/60 mL extra-virgin olive oil
2tablespoons/30 mL red wine vinegarto taste
1/2teaspoon/2.5 mL dried oregano
1/4teaspoon/1.25 mL dried basil
1/4teaspoon/1.25 mL saltor to taste
Black pepperto taste
Instructions
Preheat the air fryer to 400°F/200°C. Drizzle 1/2 teaspoon olive oil over each fillet and season generously with the Greek seasoning blend. Add them to the air fryer, and cook for 6 to 11 minutes, depending on your appliance model. I cook a 1-inch fillet for 8 to 9 minutes, until an instant read thermometer reads 145°F/63°C.
While the salmon cooks, make the salad. Slice the tomatoes, if desired, or simply leave whole, and add to a large mixing bowl. Prepare the cucumbers, onion, and olives as directed, adding them to the bowl as you go. Top with the feta.
Drizzle the oil and vinegar over the salad and toss to combine. Now, sprinkle the oregano, basil, salt and pepper overtop and toss again.
When the salmon is ready, serve warm, with the salad alongside. Alternatively, add the salad to individual bowls and top each with a salmon fillet.
Notes
If you prefer to make your own seasoning for the salmon, in a small dish, combine: 1 teaspoon dried oregano, 1 teaspoon salt, 1/2 teaspoon dried basil, 1/2 teaspoon dried dill weed, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/4 teaspoon thyme and 1/4 teaspoon black pepper. Stir to combine and sprinkle generously, to taste, over the fillets.

Use store-bought Greek seasoning
A store-bought Greek seasoning blend keeps this recipe quick and flavourful. I love having a reliable seasoning blend on hand for nights when I do not want to measure eight different spices.
Use bottled Greek vinaigrette
The homemade dressing is simple, but if you have a Greek vinaigrette you love, use it. Truly. Dinner does not need to be harder than it has to be.
Leave the tomatoes whole
If your cherry or grape tomatoes are small, you can leave them whole to save chopping time. For younger kids, you may want to slice them lengthwise for safety.
Buy pre-crumbled feta
Cubed feta is delicious, but pre-crumbled feta is very convenient and works well here.
Add a quick grain
Quinoa, microwave rice, or leftover cooked grains can turn this into a heartier Greek salmon bowl without much extra effort.
