Pumpkin Spice Waffles

Delicious pumpkin spice waffles to satisfy your seasonal craving!

Ingredients
  

  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 3 tbsp sugar
  • 2 tsp baking powder
  • 2 tsp pumpkin pie spice you can make this yourself by combining 3 tbsp cinnamon, 2 tsp ground ginger, 2 tsp nutmeg, 1 tsp ground cloves, and 1 tsp allspice
  • dash of salt
  • 1 cup milk
  • 2/3 cup pumpkin puree
  • 2 tbsp vegetable oil
  • 1 egg
  • 2 tsp butter for greasing the waffle iron

Instructions
 

  • Combine flours, sugar, baking powder, pumpkin pie spice and salt in a large bowl
  • Beat egg, milk, oil and pumpkin puree in another bowl
  • Combine wet and dry ingredients until just moistened
  • Heat your waffle iron and grease with butter
  • Using a 1/3 cup measuring cup, drop 1/4-1/3 cup dollops of batter onto the waffle iron, and cook until just golden brown on either side

Notes

Drizzle with maple syrup and serve with a yogurt and fruit smoothie (or yogurt and fresh fruit). Enjoy!
