Peanut Butter Cup Cheesecake Truffles

I'm not going to talk about nutrition, because--well--these aren't really nutritious. And that's ok -- it's the holidays! They're delicious and will make you and your family/friends/guests melt into their seats with delight. And that's all that matters in my mind.

1 package cream cheese 3 cups small chocolate peanut butter cups such as Reese's 2 cups semi-sweet baking chocolate 1/4 cup desired holiday sprinkles
Melt dark chocolate in a double-boiler over medium heat until smooth (stirring often)
Meanwhile, blend chocolate peanut butter cups and cream cheese in a food processor or good quality blender, until smooth
Transfer mixture to a glass bowl, cover and freeze for at least 10 minutes
Scoop about 1 tbsp of mixture into your hands, roll and dip into melted chocolate until covered.
Place on a lined baking sheet, top with desired sprinkles and freeze for at least 20 minutes before serving.
