Homemade Peanut Butter Granola

Ingredients
  

  • 3 heaping cups of rolled oats
  • 2 tbsp hemp hearts
  • 2 tbsp brown sugar
  • 2 tbsp shredded coconut
  • 2 tbsp coconut flour
  • 1/3 cup natural peanut butter
  • 1/3 cup coconut oil
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1/3 cup dark chocolate chips

Instructions
 

  • Combine wet ingredients in a medium microwave-safe bowl and microwave for about 30 seconds, until melted and smooth after mixing
  • In a large bowl, combine and mix all dry ingredients
  • Pour wet ingredients over dry, and with a spatula, mix until evenly coated
  • Line a large (or 2 small) baking sheet with parchment paper or a non-stick mat and spread the granola evenly
  • Bake at 340 F for about 20 minutes, tossing lightly at about the 15 minute mark
  • Allow to cool and then toss in chocolate chips! Store in a cool, dry place or in the fridge or freezer.
