Salmon has never tasted better than in this amazing (and easy recipe!). This orange coconut salmon is easy to make and kid-approved. Let’s just say, you’ll likely not have leftovers!
1large filet salmonwild or farmed – both are fine!
Salt and pepper
1navel orangerind and juice
¼cupmaple syrup
¼cupsoy sauce
1tbspcoconut oilmelted
2clovesgarlicminced
¼cupflaked coconut
Instructions
Lay your salmon filet on a greased baking sheet
Sprinkle with salt and pepper and rub with minced garlic and rind of one lemon
Combine soy sauce, coconut oil, maple syrup and orange juice and pour over. Let the salmon marinate in sauce for up to 4 hours in the fridge
Bake at 350F for about 15-20 minutes until salmon is cooked just about through. Remove from oven and sprinkle the coconut overtop of salmon and then put back in to finish cooking (about 5 more minutes).
