Easy Orange Coconut Salmon

Salmon has never tasted better than in this amazing (and easy recipe!). This orange coconut salmon is easy to make and kid-approved. Let’s just say, you’ll likely not have leftovers!

Ingredients
  

  • 1 large filet salmon wild or farmed – both are fine!
  • Salt and pepper
  • 1 navel orange rind and juice
  • ¼ cup maple syrup
  • ¼ cup soy sauce
  • 1 tbsp coconut oil melted
  • 2 cloves garlic minced
  • ¼ cup flaked coconut

Instructions
 

  • Lay your salmon filet on a greased baking sheet
  • Sprinkle with salt and pepper and rub with minced garlic and rind of one lemon
  • Combine soy sauce, coconut oil, maple syrup and orange juice and pour over. Let the salmon marinate in sauce for up to 4 hours in the fridge
  • Bake at 350F for about 15-20 minutes until salmon is cooked just about through. Remove from oven and sprinkle the coconut overtop of salmon and then put back in to finish cooking (about 5 more minutes).
  • Remove from oven and allow to cool. Enjoy!
