Easy and Delicious Carrot Cake Oatmeal

You can make this yummy carrot cake oatmeal ahead of time, or the morning of (because it’s THAT versatile and easy!). It’s dietitian-approved and tastes like carrot cake – what’s better than that?! Oh, your kids will love it too. Boom!

- 1/3 cup oats
- 2/3 cup milk of choice
- 1/4 cup finely grated carrots about 3 mini carrots
- 1/4 tsp cinnamon
- 1/8 tsp ground ginger
- 1/8 tsp ground nutmeg
- 1/4 cup raisins
- 1 tsp brown sugar
- 1/2 tsp vanilla
- pinch of salt
Combine oats, carrots, milk, vanilla, cinnamon, ginger, nutmeg and salt in a microwave safe bowl or container and cook on high for 2 minutes.
Add brown sugar and raisins and more milk if needed. Enjoy!
