Easy Air Fryer Granola (Nut-Free & School-Safe)

Ingredients
  

  • 2 cups rolled oats
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup sesame or hemp seeds
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ cup maple syrup or honey
  • 3 tablespoons melted coconut oil
  • teaspoons vanilla extract
  • ¼ cup chopped dried fruit of choice (dates, raisins, dried cherries or cranberries)

Instructions
 

  • Line the bottom and halfway up the sides of the air fryer basket with parchment paper.
  • Add the dry ingredients to the basket (oats, pumpkin seeds, sunflower seeds, sesame or hemp seeds, cinnamon, and salt). Stir to combine. Pour the wet ingredients overtop (syrup or honey, coconut oil and vanilla extract). Stir to combine. I find I have more control when I hold the parchment in place with one hand and mix the granola with the other hand rather than using a spoon.
  • Air fry the granola mixture at 330°F/165°C for 5 minutes, then give it a stir. Air fry an additional 5 minutes, then stir in the dried fruit. Continue to cook a final 3 to 5 minutes, until the granola is just lightly golden (it will darken a bit and crisp up as it sits). Carefully (it’s hot!) hold the edges of the parchment paper and lift it to a flat surface and allow the granola to cool completely. Store in an airtight container for up to 7 days.

Notes

  • This works with nut and seed butters in place of the coconut oil 
  • For softer fruit, simply stir it in after cooking. I tested this version with chopped dried cherries, which were chewy and firm when added for the last 5 minutes of cooking. Other dried fruits may harden slightly.
  • Be sure to stir it every 5 minutes or at least once during cooking so it crisps evenly with no burnt spots. When I stirred only once, after 5 minutes, there was a slightly over-browned flavour to some bites.
  • The granola can be left in the air fryer basket to cool but it may not crisp as much.
