cooked chicken
1-2 breasts depending on the size. If you're time crunched: use low sodium canned chicken breast

chopped celery
1/2
cup
chopped apple
1/4
cup
light mayonnaise
1/2
tsp
salt
1/2
tsp
curry powder
Instructions
Boil the chicken for 35-40 minutes (place raw chicken breasts in boiling water and then turn down to a simmer for 40 minutes)
Shred the chicken with two forks or in a small food chopper. Mix in all remaining ingredients.
Top with delicious tomatoes and butter lettuce and have on multi-grain bread.
Notes
Tastes delicious paired with fresh watermelon, mint and feta salad!
