I'm not going to talk about nutrition, because--well--these aren't really nutritious. And that's ok -- it's the holidays! They're delicious and will make you and your family/friends/guests melt into their seats with delight. And that's all that matters in my mind.
1 1/2packages of after-eight mintsor a package of mint chocolate cookies
2cupssemi-sweet baking chocolate
1/4cupcrushed candy cane for topping
Instructions
Melt dark chocolate in a double-boiler over medium heat until smooth (stirring often)
Meanwhile, blend the mints and cream cheese in a food processor or good quality blender, until smooth
Transfer mixture to a glass bowl, cover and freeze for about an hour minutes (you want this one really frozen before scooping because it can get kind of goopy)
Scoop about 1 tbsp of mixture into your hands, roll and dip into melted chocolate until covered.
Place on a lined baking sheet, top with candy cane sprinkles and freeze for at least 20 minutes before serving.
