Ingredients

  • 1 cup baby tomatoes sliced, or veggie of choice
  • 3 cloves garlic minced
  • 8 ounces dry spaghetti noodles
  • 1 to 2 tablespoons olive oil
  • Salt and pepper to taste
  • Broth if needed, optional
  • 1/4 cup white wine optional
  • 1 to 1/2 cups cooked sausage from ½ lb uncooked, whatever you have on hand!
  • 1 cup jarred alfredo tomato or pesto sauce
  • 1 cup shredded cheese

Instructions

  • Set the water to boil (at least 5 cups).
  • Prepare the tomatoes (or other veggies) and garlic, as directed. To a large skillet, add the tomatoes, garlic, spaghetti noodles, olive oil and salt and pepper, to taste. I use about a teaspoon of salt and 1/2 teaspoon of pepper.
  • Pour boiling water overtop, just until covered, adding the broth, if needed and if using. Add the wine, if using. Cook over high heat for 8 to 11 minutes, until the spaghetti is al dente. If needed, sauté the sausage.
  • Stir the sausage and sauce into the cooked pasta, and sprinkle the cheese overtop. Cover, reduce heat to medium-low and cook gently for 2 to 3 minutes to allow any excess liquid to be absorbed and the cheese to melt. Remove from heat and serve.

Notes

In place of tomatoes, try chopped baby spinach, broccoli or bell pepper. Swap out the sausage for ground beef and choose a tomato sauce if that’s what you have in the house. This dish is delectable all on its own and lovely with fresh herbs such as basil or parsley overtop if you don’t have any green-fearing family members!
